Bake Flora Margaret's Darker-Than-Dirt Chocolate Cake!

Gather Your Ingredients
First, let's make sure we have everything we need! Ask a grown-up to help you find these in the kitchen:
- 1 3/4 cups all-purpose flour
- 2 cups sugar
- 3/4 cup cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 eggs
- 1 cup milk
- 1/2 cup (1 stick) soft unsalted butter
- 2 teaspoons vanilla extract
- 1 cup boiling water

Prep the Pans and Start Mixing
Preheat the oven to 350°F. Grease two 8-inch cake pans and line the bottoms with parchment paper. In a large bowl, combine the sugar and butter and beat with a mixer until smooth and creamy, about 3 minutes.
Baking Tip! A creamy butter-and-sugar mixture helps make the cake soft and fluffy.

Mix the Dry and Wet Bowls
In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. In a small bowl, mix the milk, eggs, and vanilla extract.
Baking Tip! Whisking the dry ingredients helps spread the cocoa and leaveners evenly through the cake.

Combine the Batter
Alternate adding the flour mixture and the milk mixture to the sugar-and-butter bowl until everything is combined. Beat for 1 minute. Then add the boiling water.
Be careful. The boiling water will be very hot, so have a grown-up help with this part.

Bake the Cake
Continue beating for 1 more minute. Pour the cake batter evenly into the pans and bake on the center rack of the oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

Cool, Frost, and Enjoy!
Cool the pans on a wire rack for 10 minutes, then carefully flip them over and let the cakes cool completely. Frost the cake with your favorite icing. Yummy!
